RECIPE: Chicken Alfredo Lasagna Rollups

I've been dying to try this recipe ever since I found it on Pinterest. I was worried I might mess it up but managed to make it work by taking it slow. I've never made lasagna, so I was proud of myself for pulling this one off. 

Chicken Alfredo Lasagna Roll Ups

Ingredients

9 lasagna noodles
2 1/2 cups Alfredo sauce
2 cups cooked chicken, shredded
oregano
garlic salt
3 cups shredded mozzarella (or cheese of your choice)

1. Pour a 1/2 cup of Alfredo sauce in a 8" x 8" greased dish or just enough to cover the bottom of the dish.



2. Boil 8-10 cups of water and cook lasagna noodles until al dente.
3. Drain and rinse noodles with cold water to prevent them from sticking to each other and lay each out individually. Blot dry.
4. Spread approximately two tablespoons of Alfredo sauce over each noodle. Sprinkle oregano and garlic salt on top of sauce.


5. Spread shredded chicken out over each noodle. (The recipe says 1/9th of the chicken for each noodle, but I never measure that type of stuff out.)
6. Add approximately three tablespoons of cheese. 


7. To roll up the noodles, start at one end and roll the noodle over the toppings.
8. Place the roll ups in the pan layered with sauce, one by one with seam down.



9. Pour the remaining Alfredo sauce over the roll ups and top with remaining cheese.
10. Bake in a preheated oven at 350 degrees for 30 minutes or until the cheese on top is completely melted.

I had a lot of fun making this recipe and it was quite tasty, too. If you're a fan of Chicken Alfredo, you should try this twist on a classic Italian dish.

Julep Mavens

I am insanely obsessed with Julep's nail polish. 

A Julep Maven is someone who subscribes to receive two bottles of nail polish + one additional beauty related item in the mail every month. The monthly subscription is $19.99, and one bottle of polish is $14.99 all by itself. So, the subscription box is quite a STEAL.  The polish is very high quality (the polish in the picture below lasted a full 10 days before I noticed a single chip), unique, and each bottle is named after strong women.


*The additional item has been anything from pedicure cream, to cuticle remover, to fast drying drops, to mascara.

You fill out a profile, just like you do when you sign up for any other subscription box. Your answers will create your Beauty Profile. There are 4 different profile assignments:  American Beauty, Boho Glam, Bombshell, and Classic with a Twist.

I'm a Classic with a Twist. The great thing about Julep is that it doesn't really matter what your profile is because you can login during a particular time frame and view next month's products. If you like the products from another profile better than the products in yours, you can opt to receive that profile's products instead. PLUS, when you're a bit short on cash or not too crazy about the products featured that month, you can choose to opt out altogether!

Examples: Avon Skin So Soft takes me back to Camp Pine Hill because we smothered ourselves in the stuff to keep the mosquitoes away at night; Banana Pudding takes me back to weekends spent at my Granny & Granddaddy; Old Dusty Buildings take me back to elementary school

Dancing and singing.

Hippies. The music, the peace, the clothes, the hair, the groovy-ness.
