sunshine sickness and oatmeal bars

I hope you guys are having a wonderful weekend!

I am taking full advantage of having no plans by doing nothing but partaking in a little relaxation. I spent five hours at the pool yesterday. It was so nice until I felt the aftermath last night. B had to work a checkpoint last night... so, I had absolutely nothing to do. Apparently, none of my friends wanted to hang out because I got next to no response from text messages. I didn't want to sit around the house by myself all night, so I decided I would go sit at a bar where one of my friends tends bar and have a drink or two. After about ten minutes of chit chatting with V, I started feeling very nauseated. I decided to take off and I'm glad I did because I threw up the minute I got home! I guess I got a little TOO much sun! Not to mention my face looks a little like Kim Kardashian's did when she burned her face - except without the sunglasses line. (I learned that lesson earlier this summer.) After the puking episode, I took a Phenergan and went to sleep at like 8 p.m. 

Side Note: Phenergan's are my best friend and favorite prescription drug of all time. If you aren't familiar, you should get familiar. Unfortunately, my mom has a lot of stomach problems so she has a steady supply on hand. I always make sure I keep a handful of them stocked on my shelf at all times.

Anyway, I decided to stay out of the sun today. B had to work again today! and so I spent the day doing laundry, baking and cooking, watching the CCU/USC baseball game (Unfortunately, CCU lost - but we will get 'em next game!) and a friend of mine came over for a while to watch the World Cup game and paint our toenails. Of course, I wasn't able to paint mine because of the stupid fungus! (which is looking better, by the way...) So, I helped her pick out pretty shades. I made these oatmeal bars I found in Family Circle and baked spaghetti for dinner. You can find the recipe for the oatmeal bars below:


Makes 16 bars; Prep 10 minutes
BAKE @ 375 for 35 minutes
MICROWAVE 30 seconds

1 cup all-purpose flour
11/4 teaspoons baking powder
1/4 teaspoon salt
1 cup light-brown sugar
3/4 cup (1 1/2 sticks) unsalted butter, softened
1 teaspoon vanilla extract
1/4 cup milk
2 cups quick oats
11/4 cups semisweet chocolate chips

1) Heat oven to 375. Coat a 8 x 8 x 2-inch baking pan with nonstick cooking spray; set aside.
2) In a small bowl, whisk flour, baking powder, and salt together. In a large bowl, beat sugar and butter on medium-high speed until fluffy. Beat in vanilla. Reduce speed to low and beat in milk, then flour mixture. Stir in oats and 1 cup of the chocolate chips.

3) Spread batter into prepared baking pan. Bake at 375 for 35 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack. Microwave remaining 1/4 cup chocolate chips for 30 seconds; stir until smooth and drizzle over bars. Cut into squares.

  2. I was in the 9th grade when I got sun sick. I burned so bad that I am pretty sure I peeled like 300 layers of skin off. I was as red as a tomato and didn't where a bra or anything too tight for 2 weeks. Mmmm good times ;) Also, those oatmeal bars look delish, Imma thinking I'm going to have to try those yes?

  3. Those bars look yummy! And sorry CCU lost, my sister just graduated from there so I was pulling for them (plus I am a CLEMSON fan), hopefully they will win the next two!!
